Hi everyone! I hope you are all having an amazing week so far. It’s hard to believe it is already the last week of June and the 4th of July is next week! The 4th is one of my favorite holidays. Every year, we head back to Adam’s hometown and spend the day on a boat with one of his close friend’s family. It’s nice to have Adam’s family in the area as well now that we have a little one, she can stay with her grandparents while we are out on the lake all day. Fun fact: Adam and I got engaged on the 4th of July, six years ago!
An important thing to keep in mind when spending all day in the sun and enjoying drinks is, of course, to have plenty of snacks! Today, I’m excited to share four great snack ideas for all your upcoming 4th of July boat day festivities or whatever else you have planned!
Grilled Pineapple Salsa
You cannot go wrong with a fruit salad in the middle of the summer! This grilled pineapple salsa is sure to be a crowd-pleaser and is so easy to make!
Pasta Salad
Again, I feel like a good, cold pasta salad will always hit the spot in the heat of the summer. I love pasta salads because they’re an easy way to incorporate a wide variety of veggies into one dish and can even be made into a complete meal. Of course, you can change up the recipe and add any veggies you like to this. The possibilities are endless!
Midwest Sushi
If you live in Minnesota, you probably know what I am talking about here. The rolls of ham, pickles, and cream cheese are a popular appetizer for potlucks in the summer. I like to put a healthier spin on them and incorporate a little more protein to keep you fuller longer while out in the sun all day.
Ranch Crackers
The only thing I need to say about this is…these little crackers are highly addictive! You have been warned!
