These buffalo chicken wraps are an easy but delicious meal prep idea for weekday lunches. I personally meal prep every Sunday to get myself ready for the week. I have always liked to meal prep because it takes the guesswork out of what I’ll be eating and I am much more likely to eat everything I bought at the grocery store. I think we’ve all been there, we go grocery shopping with good intentions and stock up on all the healthy foods, then halfway through the week, the healthy options don’t sound as good anymore. Yep, I know I’ve been there! Meal prepping is an easy way to make it easier for us to stay on track throughout the week.
This recipe is a great one if you want to start meal prepping because the chicken is made in the crock pot and everything else just needs a quick chop, making this one simple! I work from home, so I have the flexibility to assemble my lunch right before eating it, but if you work in an office, this is a great one because it can easily be put together the night before and still be delicious the next day.
For the buffalo sauce, I like both Sweet Baby Ray’s and Frank’s. Both of these brands also make a mild version of their buffalo sauces if you aren’t a fan of heat. If you aren’t a fan of buffalo sauce at all, this could easily be made the same way but with different sauces on the chicken. You could do a balsamic, Greek, or ranch dressing, honey mustard, or any other wing sauce you enjoy, or you could simply season it the way you like your chicken.
If you need recommendations for tortillas, the wraps I use are the L’oven Fresh spinach herb wraps from Aldi. I also like the L’oven Fresh low-carb whole wheat tortillas from Aldi as well because they are lower calorie, higher fiber, and don’t contain some of the oils that the spinach herb ones do, but I am personally at the point in my monthly cycle where I benefit from additional carbs so that’s why I chose the higher carb option this time.
The thing I have always loved about food is you can do so many different things with it to make it your own. I love to take inspiration from other people’s cooking and add my twist to it. Use this as inspiration for your own ideas in the kitchen, or make this version, you cannot go wrong!
