This week has felt incredibly long. If you’re feeling the same way and want an easy, take-out style dinner this weekend, I highly recommend giving this Chicken Pad Thai a shot!

My homemade version of Chicken Pad Thai is packed with tender chicken and a delicious, peanutty sauce that comes together in under 30 minutes. Plus, it’s easy to customize—add extra veggies, swap the protein, or make it as spicy (or mild) as you like by adjusting the amount of sriracha or adding some Thai chiles.
