Hi guys – I hope you’re having a great week so far. It’s hard for me to believe I only have three more days in my twenties. While I’ve changed and grown a lot over the past decade, I’m really excited about this new chapter in my life. My twenties were all about figuring things out and making mistakes, which I’m sure won’t completely go away, but I feel like I’m going into my thirties with a clearer sense of what I want and what my goals are!
This Friday, we’re heading up north for a long weekend to celebrate with some of our closest friends. In this friend group, there are three birthdays within five days of each other in the first week of August. We usually try to all celebrate together, which gets harder the older we get and the more commitments we have, so I am so excited to get away and see our friends for a couple of days.
Ava is not tagging along on this trip so it will be the longest Adam and I have ever been away from her, which is a bit nerve-wracking, but it will be good for us and a lot of fun! Ava will be in good hands with her grandparents and auntie for the weekend.
Now, on to what you all came here for! This creamy ground beef orzo is an easy weekday meal, and the best part is that Ava loves it too. You know it’s a winner when your toddler eats it (and loves it)!


Notes:
-If you want to make it a one-pot meal, you can put the uncooked orzo right into the pot to cook in the liquids but I find this takes longer. If you do this, you may need to add some additional beef broth to get it fully cooked.
-You can use fresh or frozen spinach. I like to use fresh spinach to remove the stems before adding, but either one works fine. If using frozen, reduce the amount to ½ cup.
-You may use heavy cream in place of half and half if you prefer something thicker and creamier but I prefer the lightness of half and half plus I have more uses for half and half so I don’t waste the rest of it!
