Creamy Sausage Orzo

Makes 4 servings

Ingredients:

  • 1 cup orzo
  • 1lb mild Italian sausage
  • ½ medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ¼ cup heavy cream
  • ½ cup marinara sauce
  • ½ cup spinach, chopped
  • 2 tbsp parmesan cheese

Directions:

  1. Cook orzo according to package instructions. Set aside.
  2. Heat skillet on medium heat. Add Italian sausage and onions, and cook until sausage is fully cooked, about 8-10 minutes. Add garlic and allow to cook for an additional minute.
  3. Add the cooked orzo, Italian seasoning, heavy cream, marinara sauce, and spinach. Cook for about 3 minutes to heat the ingredients and wilt the spinach.
  4. Mix in the parmesan cheese and serve.
