Hi everyone! I hope you’re all having a fantastic week. I know I’ve been saying how quickly the months have been flying by, but October felt unusually long! Even with that said, it’s hard to believe we’re already approaching November and the final stretch of 2024.
With busy weekends the past couple of months and the holiday season around the corner, it was so nice to have a relaxed weekend this past weekend. On Saturday, I took Ava to my parents’ house for a little quality time. The weather was gorgeous, so we spent lots of time outside—playing, taking a walk, and visiting the park. Adam stayed home to work on a house project, and having Ava out of the way worked perfectly. Sunday was mostly a cozy day at home, and later, our neighborhood hosted a Sunday Funday gathering. Everyone brought a dish to share, football was on the TV and they had a bonfire going. It was the perfect fall evening!
I’m looking forward to another quiet weekend coming up. The last few months of the year are always the busiest for my job, so having a chance to truly relax on the weekends feels incredible!
Today’s recipe is going to be another super easy meal to whip together and it’s also very versatile as far as what you can serve it with. This easy, baked shrimp is the perfect weeknight meal that comes together super quickly, it’s made with simple ingredients, and it’s delicious!
This easy shrimp dish is perfect served with rice and your choice of veggies, tossed with your favorite pasta, on top of a fresh salad, or as a high-protein addition to any of your favorite meals.
As always, let me know if you give this a try! I’d love to hear your recommendations for favorite shrimp dishes too!
Stay hungry my friends!
