Another week, another meal prep idea is coming at you. Before we get to that, I hope everyone has an amazing weekend. The weather in Minnesota was absolute perfection so just about all our time was spent outside. Adam’s mom visited Ava, so it gave me some uninterrupted time to start working on our garden. Our neighbor who lives behind us has a natural yard (aka no grass) and our garden is right along the fence line, so every year it is a ton of work to pull up all of the invasive plants that migrate into our yard plus any weeds that have come up.
This year I planted new perennials, in hopes it gets a little easier each year to have a small flower garden, as well as tomatoes and strawberries. I do want to add to the vegetable garden portion but need to decide what else to plant. I think at the very least, I am going to do green beans and Brussels sprouts but let me know in the comments what you’ve grown that is relatively easy to grow and maintain.
I love the spring and summertime because you can work out in so many more ways than when you’re stuck inside for months. This weekend’s gardening was a calorie burner and you also get a beautiful result.
With that, let’s get into this week’s meal prep or dinner idea. I love a good hibachi and love Asian food in general so this is one of my favorites. Plus it is so quick and easy to make and can easily be changed up with the veggies you’re craving at the time. I used zucchini, mushrooms, and onions this time but you could add peppers, snap peas, or carrots if you wanted to change it up.
