Crack Chicken Chili

We’re deep into soup season here in Minnesota, and this one is insanely easy and packed with flavor! I love a recipe where you can toss everything together and let it simmer away for a couple of hours. This high-protein Crack Chicken Chili is perfect for those busy days when you don’t have much time in the kitchen—and it’s a great option for meal prep as it stores very well!

Notes:

-I like to use Good Culture cottage cheese as the curds are small and melt into recipes well. You can blend the cottage cheese before adding it if preferred.

-For added protein, replace the chicken broth with bone broth.
