Cook pasta according to package instructions. Strain and set aside.
In a blender, combine the cottage cheese, cream cheese, garlic, garlic powder, and onion powder. Blend until smooth. Note: if the sauce is too thick, add water 1 tbsp at a time until desired consistency.
In a greased 9×13 baking dish, add the cooked noodles, sauce mixture, spinach, and artichokes and mix to combine. Top with Parmesan cheese.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes.
Note: If you want to increase the protein in this dish, you can use protein pasta and/or add your favorite cooked protein.
