Ingredients:
For the chicken:
- 1lb chicken thighs
- 1/4 cup BBQ sauce of choice, extra for drizzling
- Seasonings: Garlic powder, onion powder, paprika
For the peach salsa:
- 1 peach, diced
- 1/4 cup red pepper, chopped
- 1/4 cup red onion, chopped
- 1 small jalapeño, chopped (adjust to taste)
- 1 lime, juiced
- 1 tbsp cilantro, chopped
- Seasonings: Salt, cumin
Directions:
- Preheat grill to 400°F. Pat the chicken thighs dry, then season both sides with garlic powder, onion powder, and paprika.
- Grill the chicken for about 5–6 minutes per side, or until the internal temperature reaches 165°F. During the last few minutes of cooking, brush the chicken with BBQ sauce and let it caramelize slightly on the grill. Remove from heat and let rest for a few minutes.
- While the chicken cooks, make the peach salsa. In a medium bowl, combine the diced peach, red pepper, red onion, jalapeño, lime juice, and cilantro. Season with salt and a pinch of cumin, then stir well to combine. Taste and adjust seasoning as needed.
- Serve the grilled BBQ chicken topped with peach salsa and an extra drizzle of BBQ sauce if desired.
