BBQ Chicken with Peach Salsa

Makes 4 servings

Ingredients:

For the chicken:

  • 1lb chicken thighs
  • 1/4 cup BBQ sauce of choice, extra for drizzling
  • Seasonings: Garlic powder, onion powder, paprika

For the peach salsa:

  • 1 peach, diced
  • 1/4 cup red pepper, chopped
  • 1/4 cup red onion, chopped
  • 1 small jalapeño, chopped (adjust to taste)
  • 1 lime, juiced
  • 1 tbsp cilantro, chopped
  • Seasonings: Salt, cumin

Directions:

  1. Preheat grill to 400°F. Pat the chicken thighs dry, then season both sides with garlic powder, onion powder, and paprika.
  2. Grill the chicken for about 5–6 minutes per side, or until the internal temperature reaches 165°F. During the last few minutes of cooking, brush the chicken with BBQ sauce and let it caramelize slightly on the grill. Remove from heat and let rest for a few minutes.
  3. While the chicken cooks, make the peach salsa. In a medium bowl, combine the diced peach, red pepper, red onion, jalapeño, lime juice, and cilantro. Season with salt and a pinch of cumin, then stir well to combine. Taste and adjust seasoning as needed.
  4. Serve the grilled BBQ chicken topped with peach salsa and an extra drizzle of BBQ sauce if desired.
